HIGH PROTEIN APPLE CINNAMON PANCAKES

 Makes 4 large pancakes         
2 pancakes contain 29 grams of protein                   

These pancakes taste great and are loaded with protein, the perfect meal 
after a hard workout.

Ingredients
1 cup of Eggbeaters or similar egg product
2 packages of Oatmeal Complete (7 grams of protein each) from Trader Joe's
1/2 teaspoon of cinnamon
2 packets of Splenda
1/4 teaspoon of vanilla extract

1/2 of large apple or 1 whole small apple - chopped
1/4 cup of vanilla protein powder (Protowhey tastes great)
Pam or other cooking spray for skillet


Directions:
Put all ingredients in bowl and mix well.  Spray skillet with Pam, cook on medium high heat like regular pancakes.

Topping:
1/2 cup of Fage (or other Greek yogurt) nonfat, plain yogurt.(10 extra grams of protein per 1/2 cup)
1/2 teaspoon of cinnamon
2 packets (or to taste) of Splenda
1 or 2 teaspoons of Sugar-free strawberry jam (or your favorite flavor)

*Stir cinnamon and Splenda into yogurt, top warm pancakes with a large dollop of yogurt mixture.  Stir jam if it's a bit congealed, and top yogurt with 1 or 2 teaspoons of jam. 

Eat!

found at Trader Joe's.
